It's because not all feet or shoes were created equal. This is arguably the #1 piece of gear after your bike. It's where all the power is transferred by one of the most sensitive aspects of your anatomy.
Crap shoes can weigh a ton & still flex in the midsole were we need stiffness most. Uppers can eat you feet, stretch in the wrong places and not breathe. Super light can wear down faster.
